Keto/Paleo Italian Wedding Soup

Meatballs:

 1 lb ground meat of choice (i recommend sausage meat)

3-4tbsp garlic minced 

Minced onion 

Italian herbs 

Tumeric

Black pepper 

Paleo powder or other all purpose seasoning to taste

Egg (optional)

Soup:

3 cups Chicken Bone broth 

3 cups baby spinach, chopped

2 tbsp garlic 

Olive oil 

Sea salt 

1 pkg Miracle rice

Mix meat and other ingredients and form in to small marble size meatballs.  Brown in skillet with evoo. 

As they cook sautée spinach in oil with garlic salt to taste. 

Pour in bone broth. 

Use slotted spoon to scoop cooked meatballs into broth. Add miracle rice and simmer for 5-10mins longer to marry the flavors.

Paleo Breakfast Muffins

Paleo not AIP (EGGS)
18 eggs
8 nitrate free chicken apple sausages
Tumeric
3-4 sprigs Fresh thyme stripped
Bundle ood fresh sage ripped
Adobo (salt, onion, garlic, parsley)

Cook sausage in oven and slice up.
Whip eggs with other ingredients. Add sliced sausage and mix well.
Spoon into 24 muffin pan.
Bake 20-30 min at 350.

Save 2-3 per Ziploc baggie, heat and eat 1min in microwave.

Baked omelette (Paleo)

This is one version of a very common recipe that I do. Originally inspired by a recipe and sheep magazine over a year ago  The foundation for most of mine other than eggs obviously is gremes some kind of 98 free sausage and possibly some nitrate free bacon.Cheese optional.
 I also highly recommend making recipes like these in muffin tins this we have a great on the go breakfast for your busy week.

 This omelette inclydes:
 6 large eggs
 4 chicken Apple sausages
4 strips of bacon crisper and crumbled
Half container of power greens
Green onion
Cilantro
Turmeric
Parsley
Adobe (Badia)

Heat oven to 350.  Bake the sausages in the oven 20-30 mins without casing.  Well that's going in the oven crisp up 4 slices of bacon and set aside on a paper towel. Pour out some of the bacon fat in a jar to save for later leaving some in the Pan to cook the greens.  Beat 6 eggs mixing in approximately one tablespoon of tumeruc as well as any other seasoning to your taste. Chop greens and mix with  cilantro green onion and fresh parsley   So saute greens in leftover bacon fat until wilted lightly seasoning with adobo.
 Slice up cooked sausage. Grease baking dish with oil I recommend coconut oil. Arrange color pieces of sausage and greens evenly across the Pan Along with the crumbled bacon. If you're choosing to add cheese I will sprinkle it lightly by generously over the sausage and greens here. Poor beaten egg mixture covering ed everything in pan. Baked covered for 20mins then leave uncovered for 5mins.
Slice serve and enjoy.

Chunky tuna salad

1 can chunk white or solid white albacore in water. Drained
1 stalk celery chopped (including greens)
2 small carrots chopped
1/2 each red n green peppers chopped
1/4 cup low fat mayo
2 tbsp relish
A few shakes of Parsley, Onion powder, paprika, ground mustard

Mix mayo, relish and spices in small bowl, add tuna and veggies and mix well ...
Spread on toast, wrap or whatever you like.

Green n Gold smashed taters

Tis St Paddys day so I'm making a Irish colored potato dish

Ingredients:
5 lbs bad Yukon Gold potatoes
1bunch green onion
2pints low fat sour cream
Celery seed n parsley flakes
1/4 cup or so skim milk.

Fill up large stock pot with water and bring to a boil. Once boiling and a generous amount of salt. While waiting for it to boil cut up all potatoes small potatoes into quarters large is into sixths or eighths. Jumping potatoes you may have to do it in two batches or use two separate pots.
While those are cooking cut up green onions, get rid of white portion and slice this green part into small pieces.
In a small bowl mix together both kinds of sour cream one capful approximately 2 tablespoons of parsley and generous shake of celery seed to taste.
Once off as he is a coo drain and dump into large bowl again he may need to use two depending on the size of your bowls.
Mash up into a rough chunky texture. Splashing milk to make mashing easier. Add sour cream mixture and fold well, then add green onion.

Makes 12 servings at approx 200/ call per serving (with low fat sour cream )


Serve up warm n yummy!!

Salsa-lapia! w/ rice & beans



1 .75 oz pkg Tilapia

Jar of salsa

1 10oz pkg f yellow rice

1 1505oz can sm red beans (or 2cups soaked beans)

1 12oz pkg corn

Dried Chives

Ms Dash Fiesta Lime

Lime juice

margerine




Lay out tilapia in baking dish. Sprinkle Ms Dash on top. scoop aprox. 3tsp of salsa on each piece of fish. spash about 1/3 -1/2 cup lime juice in pan. cover with foil and let sit at least 10-15 mins. Place in pre-heated oven (300*) for 10 mins.


Boil 2 1/2 cups water and add rice. If using canned beans drain and rinse beans. add beans into rice and cook til rice is done.



Pour frozen corn into microwave safe dish. add 2tsp margerine and 1 capful (about 2tbsp) dried chives and heat thoroughly. (apporx 3 mins if your machine doesnt have frozen setting)




Once all is cooked... Plate & Eat!!!



Add more salsa or hot sauce to taste.

Tortelloni Veggie-vera


Yummy vegetaritalaian dish (yes I made up a new word!) that is filling, a bit indulgent and still healthy.


Ingredients:


  • 1 8oz pkg Barilla Tortelloni ricotta & spinach

  • 1 12oz box ea.: Chopped Broccoli, Broccoli Florets, Italian Green Beans

  • 1 28oz can Redpack Diced tomatoes (w/basil,garlic,oregano)

  • 16 large pitted black olives, sliced

  • 2 tsp (1/2 cap) ea. Mrs Dash Garlic Herb & Tomato Basil Garlic

  • 5-6 cloves of garlic, fine chopped

  • 1/4 cup grated parmesan cheese

  • splash of olive oil

  • dash salt

Boil water for pasta. Unwrap boxed veggies and place on plate in microwave. cook 6-7 mins, breaking up broccoli about halfway through. Salt water and drop pasta in and cook about 6-7 mins., drain in colinder. In same pot saute garlic in olive oil. add tomatoes, olives, spices and heat through. Stir in veggies and pasta and cheese.


Scoop and Serve! Top with more chesse if desired
